Today was Chocolate Cupcake Day and we were going to share a recipe, but then we thought nah! we don’t need all that faffing, and all that daintiness.  What we need is a proper pudding and what is more proper than a Yorkshire Pudding!!!!  So here’s is a fab recipe, thanks to EurKitchen for sharing with us…

Yorkshire Pudding Recipe

A lovely idea to have either as a starter before the main event.  In addition it would also make a gorgeous picnic snack, or stunning hor d’oeuvres to impress your guest.

– 4 eggs ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀
– 1 cup milk ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀
– 1 cup flour⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀
– Pinch of salt ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀
– 2 tbsp lard or vegetable oil
– 4 tbsp horseradish sauce
– 4 tbsp sour cream ⠀⠀⠀⠀⠀⠀⠀⠀⠀
– Slices of roast beef, each cut into 3 thin strips
– 2 tbsp chives, snipped

– Heat the oven to 450°F.
– Pour the eggs and milk into a large mixing bowl and add a pinch of salt. First of all whisk thoroughly with an electric hand beater or hand whisk. Leave to stand for 10 minutes.
– Gradually sieve the flour into the milk and egg mixture, again using an electric hand beater or hand-whisk to create a lump free batter resembling thick cream. Leave the batter to rest in the kitchen for 30 minutes.
– Place a pea-sized piece of lard or ½ tsp vegetable oil into a 12-hole muffin tin and heat in the oven. Pour the mixture into the holes so each is a third full, and return the tray to the oven. Cook for 8-10 minutes. Remove from the oven and cool the puddings on a wire rack.
– Furthermore to make the horseradish cream, mix the sour cream and horseradish sauce in a small bowl, and season well. ⠀⠀⠀⠀⠀⠀⠀⠀⠀
– Lastly place a beef strip in each Yorkshire pudding, and add a dollop of horseradish cream and garnish with chives.
